Wash the bok choy and pull the the sections. Cut the stems and leaves into chunky pieces, about 1/2 inch pieces.

You can cook it 2 ways
In a pot of boiling water, dump the bok choy and boil for 3-5 minutes. If you like tender veggies, cook for 3 more min.
Remove from water, put in a serving plate. Drizzle oyster sauce (about 4 tsp) over the veggies, and a little drizzle of sesame oil. Mix and eat warm with your meal as a veggie dish.

Or, in a skillet or wok, add 3 tsp cooking oil. Heat skillet to med/high, and then add the veggies. Stir fry. Turn heat down to med/low. Add a dash of oyster sauce (maybe about 3-5 tsp) and a drizzle of sesame oil (a little goes a long way!). Stir fry. Add some crushed garlic. Stir fry.

You can add meat with the dish or serve alone. Serve hot.

You can try tossing up an Asian salad as well, using bok choy, by cutting them up into nice, bite-sized pieces, mixing it with soy-simmered shittake, cubes of tofu and chopped baby onions, drizzled with a little olive oil, chinese vinegar, a bit of salt and if like you can mix it with an Italian vinegarette to add to the taste.

Bok Choy, especially the baby variety (basically the of your average Bok Choy), tastes great in most Asian dishes, and you can use it in any Western dish as well.
